Spinach salad with cranberry's walnuts and goat cheese

Okay first of all. I should warn you, most of my salads are made with spinach, I am not a huge fan of romaine and I just feel spinach adds so much more flavor. Sometimes I will mix some other greens in but this one was pretty simple.

I made this salad to bring to Easter at Dan's parents place. I have to say the goat cheese really added a lot to this salad, it had a lot of simple flavors that I think came together well.

Ingredients
  • Baby Spinach
  • Arugula (optional)
  • 1/2 dried cranberries
  • 1/2 cup walnuts
  • 1/3-1/2 cup of herded goat cheese
Dressing
  •  3 tbs olive oil
  • 1 tbs balsamic vinegar
  • 1tbs white wine vinegar
  • 1 clove garlic minced
  • 1/4 tsp lemon juice
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • pepper
Put all the ingredients for the dressing in a jar and shake it up.


Arrange the spinach, arugula, cranberries, and walnuts in a bowl or on individual places and crumble the goat cheese over top. Drizzle as much dressing as you would like over the salad and enjoy
