Super Simple Alfedo with Spinach

So I am starting to think that my blog should be called that time i cooked some spinach instead of vegetables because of the amount of spinach I go through.
I can't use it enough. I love to buy big bags of it and if for some reason I haven't gone through it all and it is about to go bad, I just throw it in a zip lock and toss it in the freezer.

Okay so on to the recipe. Now don't be fooled, even though this is vegetarian it is by no means healthy, but hey everything in moderation right.


Ingredients
  • 1 lb dry pasta
  • 1 cup heavy cream
  • 1/3 cup butter
  • 2-3 large cloves garlic minced
  • 1 cup fresh grated parmesan cheese
  • 1 tsp dried parsley
  • 3-4 loose cups fresh spinach chopped
  • salt and pepper to taste
Fill a large pot with cold water and add some salt (the water should be salty enough to taste)
Bring water to a boil and add your pasta. Cook according to package directions.

In a sauce pan add the butter and garlic. Let the butter mostly melt then add your cream and gently whisk.
decrease the heat to low to med-low. The cream and butter should start to bubble. Let the mixture simmer for about 10 min until it has reduced a bit and started to thicken slightly.

Once the cream and butter have started to thicken add the chopped spinach and simmer for another 5 min.
Take the sauce off the heat and sprinkle in the parm, wait about 30 sec- 1 min then whisk the cheese in so it is well incorporated.
Add the parsley, salt and pepper.


Poor the sauce over the pasta, stir and serve.
Enjoy!! 
and maybe go for a nice long walk after to help with the guilt of this meal :)


***For a healthier version I use margarine, and 1/2 skim milk 1/2 cream***
